Im about to order ETS3 for educational purposes but I dont know which license is best suited. ETS3 Trainee is certainly affordable, but Im afraid that it will be difficult for my students to share one single project. Can I get around this by having multiple databases?

Yes, it is no problem working with multiple databases so you can use ETS3 Trainee and just change db during startup. To avoid the hassle with product-import you can use a db with all necessary products inside and use as template. Be aware that some information is not copied with the db-file, so if you are using different computers be sure that you once import the original manufacturer database to be sure all dll´s are ok. This is of course needed also for products that uses plugin-software.

You can only create one project in ETS trainee and only insert 20 products. all products and projects are always in the same database.
